Holidays, birthdays and special events often call for making dozens of sugar cookies, and frosting them makes them even more festive. It is easy to get wrapped up in the festivities and overestimate just how many cookies you actually need. Alternatively, you could be the recipient of more sugar cookies than you know what to do with. Fortunately, it is very easy to freeze sugar cookies and save them for another time.
Lay your cookies out on a cookie sheet and place them in the freezer for 1 hour. This will enable the frosting to harden up so the designs on the cookies do not get damaged from touching each other.
Remove the cookies from the freezer. Place a sheet of wax paper on the bottom of a plastic freezer container. The best size container to use for this is a 9- by 13-inch container, but the "entree" size disposable freezer containers work well also.
Place a layer of cookies on the bottom of the container. Cover with a layer of wax paper. Add another layer of cookies. Repeat until the container is full.
Store the container in the freezer for up to three months. Frosted cookies stored longer than that lose their flavor.
Freeze a single cookie by following the same procedure, but wrap it in plastic wrap rather than wax paper before putting it in the freezer.
Write the date that you are freezing the cookies on a piece of masking tape before you place the container in the freezer. This allows you to keep track of the freshness, and use them before they are no longer good.
Store cookies in the rear of the freezer, and not on freezer doors, as this is a warmer area and can compromise the freeze, and therefore the taste of the cookie.
